Frankfurter fajita tacos

Preparation time: 15 minutes

A fiesta on a plate – crisp tacos shells with cool lettuce and zingy frankfurter fajita mix, topped off with salty cheese and tangy pink pickled onions.

Ingredients

2 x Herta frankfurters, cut into 1 cm pieces
4 x taco shells
1 x small onion, sliced
½ x red pepper, sliced
½ x green pepper, sliced
1 x little gem lettuce, shredded
1 x tbsp fajita seasoning
1 x tbsp vegetable oil
1 x small red onion, finely sliced
2 x limes, juiced
½ x tsp sugar
Pinch of salt
20g crumbled feta/salad cheese

Method

  1. Blanch the red onion in boiling water for 15 seconds, drain and add in the lime juice, sugar and a pinch of salt – leave to pickle and turn a vibrant pink.
  2. Mix together the frankfurter pieces, onion, red and green peppers, oil and fajita seasoning.
  3. Heat up a frying pan, and dry-fry the fajita mix for 4 minutes, until piping hot and charring slightly.
  4. Line the tacos with little gem lettuce and top with the fajita mix.
  5. Crumble on some feta cheese and top with the pink pickled onions.

Tips

  • The fajita mix can be cooked in the air fryer.
  • Make your own taco shells by using small tortilla wraps: fold them into a u-shape and stand in an up-turned muffin tray. Bake for 5 minutes at 180 degrees until crisp. Short on time, skip this and have soft tacos instead!

Notes

  • The feta/salad cheese is similar to Mexican cotija cheese.
  • The pickled onions and feta cheese could be exchanged for jalapeños and soured cream.
  • A garnish of coriander would taste delish, but may make the dish look a bit too busy.

Nachos with cajun spiced frankfurter

Preparation time: 5 minutes

Cooking time: 10 minutes

Serves: 2 (side dish)

Difficulty: Easy

Crisp tortilla chips with spicy pieces of cajun seasoned frankfurter pieces – layered with cheese and spring onion, then baked to oozy perfection.

Ingredients

2 x Herta frankfurters, sliced into ½ cm pieces
2 x tsp cajun seasoning
1 x tsp vegetable oil
100g plain tortilla chips
30g grated mozzarella cheese
30g grated cheddar cheese
1 x spring onion, sliced

Method

  1. Pre-heat your oven to 200ºC.
  2. Mix the frankfurter pieces with the oil and cajun seasoning until all the pieces are coated.
  3. Cook in a dry frying pan for 2 minutes until cooked through and slightly charred.
  4. Layer the tortilla chips in an oven proof dish with the frankfurter pieces, grated cheeses and spring onion.
  5. Bake for around 5 minutes, until the cheese is melted and oozy.

Tips

Can also be cooked in an air fryer: cook the frankfurter pieces in the air fryer first (5 minutes), then line the basket before adding the nachos, frankfurters, cheese and spring onions and cook for a further 3 minutes.

Notes

Optional side serving suggestions: guacamole, salsa, soured cream – wouldn’t put anything on top as it would hide the product.

Smokey BBQ hot dog pizza

Preparation time: 5 minutes

Cooking time: 10 minutes

A smokey BBQ based pizza, with pieces of Herta frankfurters, red onion and sweetcorn.

Ingredients

2 x Herta frankfurters, cut into ½ cm discs
1 x pre-made 10-inch pizza base
1 x tbsp tomato puree
1 x tbsp BBQ sauce
¼ x tsp smoked paprika
½ x tsp sugar
Pinch of salt
½ x red onion, diced
40g frozen sweetcorn
50g grated mozzarella

Method

  1. Pre-heat your oven to 220ºC.
  2. Mix the tomato puree, sugar, BBQ sauce, pinch of salt and smoked paprika together.
  3. Spread the mixture out on the pizza base and then sprinkle over the grated mozzarella.
  4. Add the rest of the toppings.
  5. Pop the pizza into the oven for 8-10 minutes, until the cheese is melted and bubbly.

Tips

Can also be made as a ‘french-bread’ pizza by slicing a baguette in half and using this as the pizza base: great for cooking in the air-fryer.

Notes

  • For added zing, a dash of chilli powder to your base and jalapeños on top.
  • This would work well with a drizzle of ranch dressing on top.

Spicy rice with frankfurter

Preparation time: 5 minutes

Cooking time: 10 minutes

Serves: 2

Difficulty: Easy

A summery spiced rice dish, with peppery frankfurters, vibrant red peppers and sweet green peas.

Ingredients

4 x Herta frankfurters, sliced into 1 cm pieces
2 x pouches of microwave rice
2 x small white onion, finely diced
2 x cloves of garlic, minced
½ x red pepper, small dice
1 x tbsp tomato puree
1 x tbsp vegetable oil
1 x tbsp medium curry powder
½ x tsp salt
160g frozen peas
120ml water

Method

  1. Heat the vegetable oil in a large frying pan or wok.
  2. Fry the onion until soft (around 2 minutes), then add in the minced garlic and quickly stir through.
  3. Add in the curry powder and tomato puree, and fry for another minute.
  4. Add 120ml of water to loosen the mixture and add in the frankfurter pieces, red pepper, rice, salt and frozen peas.
  5. Cook for another 5 minutes, frequently stirring, until piping hot.

Tips

If you prefer to cook your own rice, this works best when it is cold and is a great way to use up leftovers.

Notes

  • Add some fresh chilli for extra zing.
